4 cups water
2 cups dry white wine
1 medium onion, sliced
1 bay leaf
1½ tsp coarse salt
3 lb fresh tuna steaks, ½-inch thick

1½ cup mayonnaise
3 tbsp white wine
¼ cup white wine vinegar
½ cup chopped scallions
½ cup chopped celery
¼ cup capers, drained
1 cup chopped fresh dill
Salt and pepper to taste
Sprigs of dill for garnish

Directions:
Directions:
Put water, wine, onions and seasoning in a skillet. Simmer for 5 minutes to blend flavors. Add tuna steaks and poach for 10 minutes or until fish flakes at the touch of a fork. Remove tuna from broth and cool. Discard broth.

Whisk together mayonnaise, wine and vinegar. Add vegetables and seasoning. Break tuna into large chunks and fold into mixture. Place on bed of red leaf lettuce and garnish with dill. Serves 8.
