3 cups grated raw carrots
4 eggs
2 cups sugar
1 1/2 cups oil
2 tsp baking soda
1 tsp vanilla
1 cup chopped pecans or walnuts
1/2 tsp salt
2 cups all purpose flour
1 tsp cinnamon

Directions:
Directions:
Grease and flour 2 - 9" cake pans. Combine carrots, eggs, sugar, and oil. Blend well. Add remaining ingredients and beat until well-mixed. Pour into pans and bake in pre-heated oven for 40-45 minutes. Cool.
Icing: Soften 8oz cream cheese, then beat until fluffy. Gradually beat in 1 box powdered sugar. Add 2 tsp milk. Beat well. Ice between layers, on top and sides of cake.
