2/3 cup sugar
4 1/2 cups flour
1/4 tsp salt
2 egg yolks, or 1 egg
2 tbsp butter or margarine
1/2 tsp vanilla
1 1/2 cups scalded milk

Directions:
Directions:
Combine dry ingredients and milk, and cook in double boiler or over direct heat, stirring constantly. Mix 2 Tbsp of hot mixture with beaten egg, then gradually add to the rest of the hot mixture. Add butter. Cook until thick enough to hold shape. Cool partially. Add vanilla and pour into baked cool pie crust.

For chocolate pie, add cocoa or chocolate. For lemon pie, omit vanilla and use lemon juice instead. (This is an old-time recipe, and very good!)
