1 roll Pillsbury sugar cookie dough
8 oz cream cheese, softened
1/3 cup sugar
shredded coconut (optional)
fruit as desired: I use strawberries, blueberries, grapes and kiwi. You can also use mandarin oranges, blackberries, raspberries, or bananas (sprinkle with lemon juice or Fruit Fresh)

Let cookie dough soften. Spray pizza pan or baking sheet with non-stick cooking spray. Using a rolling pin or your hands, spread cookie dough out to cover pan. Bake according to directions on pkg for 8-10 minutes, or until golden brown. Don't overbake - you don't want a crunchy crust. Cool completely (I put mine in the refrigerator to cool). Combine cream cheese and sugar, and beat by hand until smooth. Spread this over the cooled cookie crust. Wash, peel and cut fruit as necessary, and arrange on crust. Smaller pieces of fruit make it easier to slice the pizza later. I cut grapes in half, so they don't roll around. After your pizza is complete, refrigerate for at least an hour before serving.
Note: I've made this for the Fourth of July, and used only strawberries, blueberries and coconut. You could do one for Halloween using mandarin oranges, blackberries and kiwi, and coconut tinted with food coloring.
