1 cup whole milk
3 tablespoons vegetable oil
1 cup flour
1/2 teaspoon salt

Directions:

1. Preheat oven to 400 degrees2. Beat eggs, milk, and oil together.

2. Sift flour and salt into egg mixture and beat until smooth

3. Fill 6, buttered, muffin tins about 3/4 full.

4.Bake 30 minutes and reduce heat to 325 degrees and continue cooking last 15 minutes.

I at least double this batch and I make it for Christmas dinner with Roast Beef and gravy. It is actually the Popover recipe from Neiman's, but it doubles for the Yorkshire Pudding recipe that my husband grew up on in Canada where they ate these as their bread with beef and with gravy spooned over the top. You may also want to try them with homemade chicken salad inside for lunch!
