1 medium head cauliflower
About 1½ cup broccoli florets
3 tbsp butter
3 tbsp flour
1½ cup milk
½ cup sharp cheddar, grated
About ½ tsp spicy mustard
Salt and pepper to taste

Directions:
Preheat oven to 250°. Clean cauliflower, leaving it whole. Place in 1-inch of boiling salted water. Cover and steam about 10 to 15 minutes until tender, but firm. Lift from water, letting excess drain back into pot, and place in buttered shallow baking dish. Put florets in water and cook 5 to six minutes. Remove from pot and place around base of cauliflower.

While cauliflower and broccoli are cooking, melt butter in a medium saucepan. Stir in flour and continue whisking for one minute. Add milk, and continue stirring over low heat until the mixture boils and thickens. Remove from heat and add cheese. Stir until melted and season to taste with mustard, salt and pepper.

Ladle about one third to one half of the cheese sauce over the cauliflower, keeping away from the broccoli if possible, and garnish with paprika. Place in oven for about 15 to 20 minutes, until heated throughout and the cheese sauce is lightly browned. Down let the cauliflower or broccoli get too dry. Serve with remaining cheese sauce on the side.
