1 yellow cake mix
1 medium can crushed pineapple
1 cup sugar
3 bananas
1 small instant vanilla pudding
8 oz Cool Whip
1 can shredded coconut (optional)
8 oz cream cheese, softened
Directions:
Directions:
Bake cake according to directions on box in a 13x9 pan. Prepare pudding as directed. Put cream cheese in mixing bowl and whip lightly for 1-2 minutes. Add pudding to cream cheese, a little at a time, blending well each time, until all the pudding is blended with the cream cheese. When the cake is done, combine sugar and pineapple in sauce pan and heat for 5 minutes. Pour this mixture evenly over the cake. Slice bananas and arrange slices over cake. Spoon pudding mixture over the bananas. Top with Cool Whip, and sprinkle with coconut if desired. Refrigerate overnight. (This cake gets better and better the longer it sits!)
