6 slices of bacon, cut in 1" pieces
1/3 c. flour
2 cans (14 oz.) chicken broth
3-4 medium red potatoes, cubed
1 1/2 c. frozen corn
1 1/2 c. frozen broccoli
1/2 tsp. dried Thyme
1 c. milk
salt and pepper to taste

Cut bacon into 1 inch pieces. Cook bacon in soup pot until crispy.
While bacon cooks, wash potatoes and cube.
When bacon is crispy, remove bacon pieces and set aside.
To make roux for soup (flour/fat base that provides thickness to soup), you will use 2 T. of bacon grease. If there is too much dump out grease and only use 2 T.
Add 1/3 c. of flour and stir for 30 seconds to 1 min. till grease is soaked up and forms a ball.
Add 2 cans chicken broth. Pour broth into the sizzling pan and watch it deglaze remaining bacon bits.
Add potatoes, bring everything to a boil and cook till potatoes are tender (about 10 min) Stir often.
Add broccoli and corn.
Add milk, thyme, salt, and pepper. Bring back to boil and cook for a few minutes.
Let soup sit before serving. Sprinkle each bowl with bacon bits.

Very good soup but I like to double the bacon and add it all back into the soup before serving.
