1 cup water
1 cup sugar
½ cup passadic raspberry syrup, if available
3-4 cups fresh ripe sliced strawberries
1 tbsp lemon juice
2 eggs whites, beaten stiff
Fresh mint sprigs

Directions:
Directions:
Boil the water and sugar for five minutes to make a simple syrup. Remove from heat and cool, adding the raspberry syrup if available. If passadic syrup not available, increase water and sugar to 1½ cups each. Blend or process the ripe strawberries. Stir in lemon juice. Add the syrup. Freeze in a low container such as a glass baking dish until it reaches the slushy stage. Beat egg whites until stiff. Fold into the strawberries. Move to a closed container and let harden. Scoop into dishes or goblets to serve. Garnish with mint sprig.

If made without egg whites, it will be a deeper red and more solidly frozen. Softened in the refrigerator for about an hour before serving.
