2 ripe tomatoes, chopped
1 cucumber, chopped
10-12 black olives, sliced
3-4 scallions, sliced

3 tbsp fresh lemon juice
¼ cup oil
½ tsp salt
¼ tsp pepper

Directions:
Directions:
Slice and chop the vegetables. Whisk lemon juice and oil in a small bowl, season to taste. Pour over the tossed vegetables and allow to marinate for at least half an hour, stirring or flipping over the container occasionally. Serve cold or at room temperature.
