2 c. sugar
1 c. oil
3 eggs
1 tsp. baking soda
1 tsp. salt
1 tbsp. vanilla
2 1/2 c. flour
3 c. fresh apples (peeled and diced)
1/2 c. raisins (optional)
1/2 c. walnuts (optional)
1 bag butterscotch chips
Directions:
Directions:
Combine first seven ingredients, mixing until smooth. Add all remaining ingredients, except butterscotch chips. Mix well. Put into greased 9x13 baking pan. Sprinkle 1/2 to full bag of butterscotch chips over the top of the mixture.

Bake in preheated oven at 350º for 40 minutes.
