¾ lb potatoes
½ lb onions
Salt
¼ cup vegetable oil
Freshly ground pepper to taste
½ cup diced green peppers
½ cup diced red peppers
½ cup sliced mushrooms
6-8 eggs
2 tbsp butter
1 cup grated cheese (optional)
1 tbsp balsamic vinegar

Directions:
Directions:
Peel the potatoes and cut them into ¼ inch cubes, about 2 cups. Drop in cold water to prevent discoloration. Peel onions and cut into thinnest possible slices.
Drain potatoes and put in saucepan with cold water to cover. Add salt. Bring to boil and cook until tender, but not mushy, 6-8minutes. Drain immediately.
Heat oil in an omelet pan, then add potatoes, salt and pepper. Cook stirring often, but gently, until potatoes are golden brown. Transfer potatoes to paper towels to drain. Add a little more oil to pan and saute peppers, onions and mushrooms until golden brown. Place on paper towel.
Break eggs into mixing bowl,add salt and pepper and beat until mixed.
Melt butter in pan. Return vegetables to pan. Increase the heat to high and pour in the eggs, stirring with a fork. Reduce heat to moderate, cover and cook for 2 to 3 minutes. Remove from heat, sprinkle with vinegar and cheese. If using cheese, place under a broiler for 2 to 3 minutes to melt and brown.Cut fritatta into 4 to 6 pie-shape pieces and serve.
