2 ½ cups rich fish stock
1 cup plus 2 tablespoon clam juice
¼ pound scallops with juice (chopped)
¼ pound raw shrimp (shelled, deveined and chopped)
¼ pound crab meat (shredded)
2 green onions (white part only, chopped)
1 celery stalk (chopped)
2 tablespoons fresh parsley (chopped)
1 ½ tablespoon pimento (chopped)

3 tablespoons butter
5 tablespoons flour
3 tablespoons sherry
¼ cup half & half
¾ cup whipping cream
1 ⅛ teaspoon dill weed
¾ teaspoon thyme
½ teaspoon seafood seasoning
½ teaspoon ground pepper
¼ teaspoon nutmeg
Salt
¾ cup cheddar cheese (grated)

Directions:
Directions:
Combine stock and other broth ingredients in heavy saucepan. Simmer 30 minutes. Melt butter in heavy small saucepan over low heat. Whisk in flour and stir 3 minutes. Blend in sherry. Remove from heat. Whisk in half & half. Stir into seafood broth. Blend in cream and seasonings, salt to taste. Add cheese and stir until melted. Simmer 10 minutes, serve hot. (Note: you may want to use slightly less seafood seasoning and thyme. More like a chowder than a bisque.)
