1 pkg wonton wrappers, sliced into triangles
1 lb Monterey Jack cheese
1 cup creamy peanut butter
1 cup Apricot jam
4 chicken breasts, cooked and shredded
1/8 cup cream (may substitute milk, just use a little less)
1 Tbsp Wasabi
1 cup salted roasted peanuts, chopped fine
bunch of green onions, chopped

In a large pan, heat about 1 1/2 inches of peanut oil to medium. Fry the wonton wrappers until golden. Set aside.
Over medium-low heat, simmer together peanut butter and jam. When well blended, stir in shredded chicken. Keep on low heat. Mix together cream and Wasabi and set aside.

These need to be made "per plate," so starting with your first plate, place about 10 wonton chips on. Sprinkle 2 handfuls of cheese evenly across the chips. Microwave on high for about 30 seconds. Ladle on about 1/8 cup of the chicken mixture, then drizzle with Wasabi cream, and garnish with a sprinkling of peanuts and a few chopped green onions.

This recipe makes about 6 large plates.

I stumbled on these when I ate with my friend Shawna at The Luxe in Las Vegas. We had the hardest time wrangling the recipe out of our waiter, so we ended up asking a bunch of waiters. Through the bits and pieces I was able to put together through them as well as the brief menu description, I was able to develop a great knock off. These are absolutely delicious. The restaurant served them with a blob of rice and black beans in the center.
