Ingredients:
Ingredients:
3 eggs
1 cup sugar
1/3 cup water
1 tsp vanilla extract
3/4 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
Powdered sugar
Cool Whip
1 mini bottle "99 Bananas" (or 1 tsp banana extract)
1 cup fresh strawberries, sliced thin
chocolate sauce for drizzle

Directions:
Directions:
Preheat 375 degrees. Line a 15-by-10 inch jelly roll pan with aluminum foil then grease well with butter.
Beat 3 eggs until thick, then beat in the granulated sugar gradually. Add the water and vanilla and beat on a low speed. Add the salt, baking powder and flour and beat until the mixture is smooth. Pour into the jelly roll tin and smooth the mixture out flat. Bake for 12 to 15 minutes. Sprinkle powdered sugar over a clean towel. The towel should be slightly larger than the cake. Loosen the cake from the pan and turn it onto the towel.
Trim off rough edges. Carefully roll up the cake and towel and leave it to cool. Unroll the cake and set the towel aside.
Stir 99 bananas (or the extract) into the Cool Whip and spread evenly over cake. Place the strawberries slices on top. Roll up the cake then sprinkle with more powdered sugar. Keep refrigerated until ready to serve. Cut cake into 1 inch thick slices, and serve on a plate drizzled with chocolate. (May top with a few banana slices and/or chocolate dipped strawberry.)

Personal Notes:
If you are a Banana Split purist, you may want to add crushed pineapple in with the Cool Whip.
