3/4 scallops
salt & pepper
pinch paprika
3 T. butter
clove garlic
2 T. dry sherry or chn broth
1 T. lemon juice
pinch minced oregano
pinch fresh tarragon

Directions:
Directions:
take eye out of scallops, pat dry. sprinkle with salt, pepper and paprika. Sear in 2 T. butter. in another saucepan put 1 T.butter, garlic, add sherry, cook until sherry almost evaporated, add lemon juice, oregano and tarragon. move scallops to this pan and sear.
