3 lbs. strip sirloin, approx.
1 pkg whole mushroom
12 boiling onions
3 small peppers, red or green
pkg cherry tomatoes

Set oven at broil. or use outside grill. Cut ends of the boiling onions. Pull caps off the mushrooms. Cut peppers in 1/4s or if large in 1 1/2" pieces. Set a pot of boiling water on the stove and a container of ice water for blanching next to it. Put one item at a time in the boiling water until just softened, approximately 2 min. and take it out with a strainer and pop it into the ice water. When cool set aside. I start with the peppers, then mushroom. Do the onions last as they will take approximately 5 min, and they might lose the outer shells in the water. Change the ice water, then take them out. Once you have done that the outer shells will come off just by squeezing the onion. Put aside. Cut the sirloin into strips, approximately 1 1/2". Then cut the strip into pieces about 1" square. Should have 5 pieces of meat for each skewer. Start to skewer with meet, then pepper, onion, meat, mushroom,tomato, meat pepper, onion,meat, mushroom, tomato,meat. Set in refrigerator until 10 minuets prior to broiling. Let rest for 10 minutes prior to broiling. at this point you might just brush with oil if it was a very good steak. If not I would marinate the steak with spices and oil prior to putting them on the skewer. They will cook very fast so watch them. Turn in about 3-5 min. depending on how you want them done. Cook on other side approximately the same time. Prepare the dishes to serve them on. I use a rice pilaf as the base. Take each skewer off no more that 2 pieces at a time or you will mush the tomatoes. Place in the center of the rice and serve. As a side I usually use asparagus or if I use green peppers, I use roasted carrots.

Great make ahead meal for company. Looks like you spent all kinds of time getting ready and only have to be away from your guests for the 10 min. cooking time. Blanching the vegetables stops them from breaking and falling off the skewer during broiling.
