3 - 4 chicken breasts, bone-in, skin on (boneless is fine, too; just reduce cooking time to about 20 - 25 minutes total)
2 tsp. + 2 tbl. Slap Ya Mama cajun seasoning mix (hot blend); or,
1 (5 oz.) bottle Tabasco habanero sauce
1 cup buttermilk
2 tbl. dill pickle juice
2 cups all-purpose flour
4 tbl. olive oil
Canola oil for frying

Soak the chicken in buttermilk mixed with 1 tsp. of the Slap Ya Mama seasoning and 2 tbl. pickle juice in refrigerator overnight (up to 24 hours in advance). Combine flour and 1 tsp. SYM seasoning. Dredge chicken in mixture, shaking off excess. Preheat oven to 350º. Pour oil to a depth of 1 - 2" in iron skillet. When hot enough to sizzle test drop of water (about 325º), fry the chicken in batches for about 6 - 8 minutes per side. Place on 1/2 sheet pan and finish off in the oven for about 15 - 20 minutes (for a total cooking time of 30 - 40 minutes bone-in, or 20 - 25 minutes boneless); it will continue to cook as it rests. Check a piece to make sure it's no longer pink, but not too dry, either. Meanwhile, mix olive oil with remaining 2 tbl. Slap Ya Mama hot seasoning mixture to make a paste. When chicken is done cooking, rub or brush paste all over each piece of chicken. If you are using the Tabasco habanero sauce rather than SYM, use the whole 5 oz. bottle mixed with the buttermilk as an overnight marinade. Then season the flour with 2 tsp. salt, 3/4 tsp.pepper, and 3/4 tsp. onion powder before dredging chicken. The Slap Ya Mama will give you a more authentic result but you might have to order it online, while the Tabasco habanero is available at most grocery stores.
To be authentic, spear a dill pickle slice on top of chicken and serve over a piece of white bread. I typically go with a boneless chicken breast and serve mine over a salad.
And note that if you want to increase the heat, add more of the Slap Ya Mama seasoning to the olive oil when you make your paste.
