1 cup ( 4 oz. ) shredded cheddar or provolone
cheese
1 unbaked pastry shell ( 9 inch ) or pie shell
1 cup diced cooked chicken
1/2 cup chopped spinach ( thawed frozen, or
fresh cooked )
1/4 cup chopped onions
2 eggs
3/4 cup milk
3/4 cup mayonnaise( do not use mayo substitutes )
1/4 tsp salt or seasoning ( optional )
dash of pepper, to taste

Sprinkle 1/4 cup of cheese into the unbaked pastry shell In a bowl, combine chicken, spinach, onions and remaining cheese. Spoon into the pie shell. In another bowl, whisk eggs, milk, mayo & seasonings until creamy and smooth.. Pour into
pie shell and chicken mixture.Bake at 350 to 375 degrees for aprox. 40 to 45
mins. ( top should be lightly browned )
cool and slice.
my notes:

For the bacon / tomato version.. substitute
3/4 cup cooked bacon, crumbled for the chicken,
