Crust:

1 ½ cups flour
1 tsp salt
2 Tbsp milk
2 tsp sugar
½ cup oil

Mix crust ingredients and pat into a 10 inch pie plate. Set aside.

Cream cheese layer:

2-3oz packages cream cheese, softened
1/3 cup sugar
½ tsp lemon extract
¼ tsp vanilla
1 egg

Beat cream cheese in a mixing bowl. Gradually add sugar, beat until fluffy. Add flavorings. Beat in egg. Pour into pan and bake at 300 degrees for 20 minutes. Let cool to room temperature, then place in freezer for 1 hour. While freezing, prepare pecan pie layer.

Pecan pie layer:

¼ cup sugar
1 tsp vanilla
1 egg
2 Tbsp melted butter
1/3 cup corn syrup
1/8 tsp salt
½ cup pecans, chopped fine

Beat all ingredients except for pecans until well-blended. Pour over frozen cheesecake. Bake at 375 degrees for 20-30 minutes or until set. Cover edges of foil with foil to prevent excess browning. Cool slightly before refrigerating. Chill thoroughly, then top with chocolate silk layer.



Chocolate silk layer:

¼ cup butter
1/3 cup sugar
½ square bittersweet chocolate, melted
½ tsp vanilla
1 egg

Cream butter and sugar. Add melted chocolate, vanilla, and egg. Beat for 5 minutes. Pour on top of pie. Chill for several hours and top with whipped cream and either shaved chocolate curls or mini chocolate chips.

This is another one of my creations, modeled after the pie at Village Inn that tasted like French silk, pecan pie, and cheesecake all combined. This one takes some time, but is well worth it.
