1 large onion
˝ cup olive oil
2 cloves garlic, crushed
1 large green pepper, chopped
˝ cup celery, sliced diagonally
1 cup uncooked rice
4 cups chicken broth
1 Tbsp cumin
1 tsp cayenne pepper
1 tsp salt
1 tsp black pepper
2 Tbsp Worcestershire sauce
1 cup cooked chicken, cut into chunks
1 cup Andouille sausage, cut into chunks
2 Tbsp parsley
2 Tbsp basil
2 Tbsp green onions, chopped

Directions:
Directions:
Saute onions in the oil, until onions become transparent. Add garlic, green pepper, and celery, and saute 5 minutes. Add rice and sauté until rice is slightly golden.

Add broth, cumin, cayenne, salt, pepper, and Worcestershire sauce. Cook 30 minutes, then stir in remaining ingredients except for green onions. Simmer 15 to 20 minutes, garnish with green onion and top with Cajun seasoning as desired.
