2 1/2 cups all-purpose flour
1/4 cup sugar
1 1/2 T. baking powder
1/4 tsp. salt
1/4 lb + 2 T. butter (unsalted) softened
1 cup cold milk

Directions:
Directions:
In a bowl combine flour sugar, baking powder & salt, mix well, break up any lumps.
Work the butter in by hand until the mixture resembles cornmeal, making sure no lumps are left.
Gradually stir in milk, mixing just until dry ingredients are moistened.
DO NOT OVER MIX.
spoon the batter into 12 greased muffin cups.
(I use the large baking scoop for this , makes muffins even in size.)
Bake at 350º until golden brown, about 35 to 40 mins.
The finished muffins should have a thick crust with a cake like center.©

Very good! If you over mix they will be tough.
