1 can diced tomatoes
1 can Rotel tomatoes (drained)
½ 15 oz can tomato sauce
¼ 6 oz can tomato paste
¼ cup white vinegar
¼ cup ketchup
½ cup water or Rotel juice
½ tsp ground cumin
1 Tbsp salt
1 Tbsp white sugar
1 cup minced onion

Directions:
Directions:
In a large soup or stock pot, combine above ingredients with water or Rotel juice to desired consistency. Bring mixture to a slow boil, reduce heat, and let simmer for at least 2 hours. Let the mixture cool completely, then pour into individual jars. Keeps several weeks when stored in refrigerator.

Note: Chop everything fine (minced), or run it through a food processor. You can also use whatever size chunks you like, if you prefer salsa to hot sauce.

Adjust ingredients to taste (wimp, mild, or hot)
Texans love Mexican food, especially with good hot sauce. Mexican restaurants are judged by the hot sauce they serve. This is my version of “hot sauce;” not salsa.
