8 ounces uncooked medium egg noodles
2 cups diced cooked pork
1 cup shredded sharp Cheddar cheese
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (8 ounce) can corn, undrained
1 (2 ounce) jar pimento, undrained
1 medium green pepper, diced

Directions:
Directions:
Preheat oven to 375º. Cook noodles according to package directions until al dente (do not overcook as they will be baked in hotdish).

In ungreased casserole dish, mix pork, cheese, soup, corn, pimento and green pepper. Stir in cooked noodles.

Bake for 45 minutes, uncovered, stirring occasionally. Serves 6.

We enjoy this scooped up with plain potato chips or crumbled on top after baking. The combination of ingredients has a distinct flavor that I crave every winter and have never tasted anywhere else.
