1 leg of lamb (about 5 lbs.) butterflied
1/2 t. salt
1/2 t. fresh ground black pepper
1 T. minced fresh oregano
1 T. minced fresh basil
1 T. minced fresh parsley
2 cloves of garlic, minced
1/4 C. soy sauce
1/2 C. dry red wine
1/4 C. red wine vinegar
1/2 C. extra virgin olive oil

Directions:
Directions:
Place lamb in a large, shallow pan
MIx ingredients and pour over meat.
Marinate in refrigerators for 24 hrs, turning every 6 hrs. and basting occasionally. Remove from the refrigerator and bring to room temperature before grilling.
Grill high for approximately 25 minutes, turning once at 12 minutes. Remove from the grill and let stand for 10 minutes before carving.
(Cook a little longer for well-done)
