5 c. chopped, cooked chicken
1/2 large onion, diced
2 Tbs. olive oil
1 red pepper, diced
1 small can chili's
1 rounded tsp. minced garlic
1 tsp. white pepper
1 1/2 tsp. cumin
1 tsp. salt
1 tsp. poultry seasoning
6 Tbs. butter
1/2 c. flour
6 c. chicken broth
4 cans white beans (15 oz can, slightly seasoned)
4 fresh jalapeno pepper, seeded and minced (optional)

In large skillet, heat olive oil over medium heat. Saute onion, red pepper, (jalapeno's if used), and garlic together. Add chicken and heat through. Add seasonings. In separate sauce pan, melt butter over medium heat. Stir in flour to make a roux. Whisk in 4 c. chicken broth and mix all together. Stir this mixture into the sauteed chicken and vegetables. Stir in beans with can liquid and additional 2 cups chicken broth. Simmer all over low heat for 15 to 20 minutes or until heated through.

This is double the original recipe and made more than a full crock pot. One bunch of green onion can be used in stead of yellow onion.
