3 Fresh or dried bay leaves
500 gm diced stewing beef
500 ml ale, Guinness or stout
2 stalks of celery, diced
2 medium onions, diced
2 carrots, diced
olive oil
2 heaped tablespoon flour
1 large tin diced tomatoes
sea salt and freshly ground pepper

Directions:

Preheat oven to 350.
Heat olive oil in casserole pan over medium heat. Add vegetables and bay leaves and saute 10 minutes. Add meat, mix and saute. Add flour and mix until heated through. Add ale and tinned tomatoes (including juice). Give it a good stir and season. Bring to the boil. Put the lid on and simmer in oven for 3 hours. Remove lid for final hour of simmering. Season as required and don't forget to remove bay leaves before serving. Serve with creamy mashed potatoes or dumplings.
