1 lb. Well trimmed Sirloin
8 oz. Fresh Mushrooms, sliced
2 Green Bell Peppers, julienne
2 Onions, diced
2 Cloves Garlic, minced
16 T. Butter (2 sticks)
2/3 C. Flour
24 oz. Beef stock or consommé
20 oz. V-8 juice
2 Dashes of Worcestershire Sauce
2 t. Basil, leaf
1/2 t. Thyme
1/2 t. Rosemary, leaf
1/2 t. Black pepper; Salt to taste

Directions:
Directions:
Melt butter in a heavy pot and brown the meat over medium heat. Add the vegetables and garlic. Saute until the onions are just transparent while stirring constantly. Remove from heat and stir in the flour. Add the beef stock while stirring constantly with a wire whip. Return the pot to low heat and add all remaining ingredients. Simmer, stirring occasionally, for 30 minutes. Taste and adjust seasonings to personal preference.
