3/4 C flour
1 package quick rise yeast
pinch of sugar
pinch of salt
2/3 C hot water
2 t olive oil

Toppings:
string cheese
shredded mozzarella cheese
low sodium pasta sauce
your choice of other toppings!

Directions:
Mix all the dry crust ingredients. Add the olive oil to the hot water and mix into the dry ingredients. Form a ball and add more flour if necessary until the dough is no longer sticky. On a floured surface, let the ball of dough rise. Spray plastic wrap and cover over dough for about 20 minutes. Roll out the crust with a rolling pin to about an 8th of an inch in thickness. Let the dough hang over the edge of the pan at least an inch.

Preheat oven to 450º

Cut the string cheese into three or four long strips for stuffing the crust. Lay cheese along the inside edge of pan on the crust. Roll the crust over the cheese and press down. Add sauce and topping ingredients and cheese.

Bake on lower rack until cheese topping is light brown.

The best pizza in town! Add your own ingredients. Personal favorite is thinly sliced tomatoes, pepperoni, green pepper slices, red onion slices, mushrooms and well drained pineapple tidbits.
