1/2 pound ricotta cheese
1 cup milk
4 egg yolks well beaten
1 cup sugar
1 tablespoon flour
1/4 teaspoon salt
1/2 teaspoon vanilla
3 tablespoons lemon juice
Some chopped up lemon rind
4 egg whites

Directions:
Directions:
In a large bowl combine cheese, milk, egg yolks, sugar, flour, salt, vanilla, lemon juice and rind. Blend well and fold in stiffly beaten egg whites, Blend again and pour into deep pie crust shell. Bake in a 350º oven for 1 hour, or until firm. Let stay in oven until cool.
