Ingredients: CRUST: 3/4 cup graham cracker crumbs 3 tablespoons butter, melted 3 tablespoons sugar FILLING: 3 (8 ounce) packages cream cheese 3 eggs 1 cup sugar 1/2 teaspoon vanilla TOPPING: 1 pint sour cream 1/2 teaspoon vanilla 3 tablespoons sugar or more to taste

Directions:CRUST: Mix all ingredients and line in bottom of 10 inch spring foam pan. (Or buy a pre-made graham cracker crust). FILLING: Place cheese in large bowl, beat with electric mixer. Add sugar gradually. Add eggs one at a time. Add vanilla last. Pour into pan and bake 25 minutes at 375º. Take out and pour on topping. TOPPING: Whip all ingredients together then pour carefully over top of cake. Bake in 500º oven for 5 minutes. Cool and refrigerate before serving. |

Notes: A friend of mine gave me this recipe in 1979. I stashed it away and never made it and forgot about it. Bill loves cheesecake and several years ago he was going to a potluck and asked me if I had a good cheese cake recipe. He made the cheese cake himself, and it went over great. Now, Bill who never did and still does not know much about cooking, has become famous among his friends for his cheesecake and is asked to make it often. Once a friend paid Bill for making it then the friend served it to his girl friend telling her that he himself had made it. I understand this young man scored a lot of points with his girl friend when she tasted the cheese cake. This really is the best cheesecake I’ve ever eaten. Cashie (Rounds) Lehto
