1/4 lb. oleo or shortening
1 1/4 - 1 1/2 cups sugar
3 egg yolks
1 teaspoon vanilla or lemon extract
1 teaspoon soda
1 teaspoon salt
2 teaspoon baking powder
2 cups flour – more or less
1 1/2 cup buttermilk

Directions:
Directions:
Cream shortening and sugar. Add egg yolks one at a time then add vanilla or other flavoring. In a separate bowl combine dry ingredients then add to creamed mixture alternating with buttermilk.
Pour into 2 greased and floured 9" cake pans
Bake 20 – 30 minutes at 350 degrees.

Frosting:

1 cup sugar
1/3 cup water
1/3 teaspoon cream of tartar
2 egg whites, beaten stiff
1 1/2 teaspoon vanilla


Combine sugar, water and cream of tartar in medium saucepan. Bring to boil, cover for first three minutes, then cook until syrup spins a thread (242 degrees). Pour hot syrup into egg whites, beating constantly. Stir in vanilla.

Frost, sprinkle with coconut if desired.

This cake was also known as Mama's Coconut Cake, and Buttermilk Cake. I will always remember Grandma saying when we visited, "I have some cake here but it's no good,"...and of course it was always delicious.
