5 1/2 - 6 lbs. chicken wings (thawed)

Dry Spice:
4 tbs smoked paprika
2 tbs. dry mustard
2 tbs. sugar
2 tps. roasted cumin
2 tsp. salt
1 tsp cayenne pepper
1/2 tsp. black pepper

Habanero Sauce:

1 c. butter
2 tbs. minced habanero
2 tbs minced serrano peppers
1/2 c. tabasco sauce ( any hot sauce)
1/2 c. asian chili garlic sauce
1/8 tsp. cinnamon
1/2 tsp. black pepper

Blue Cheese Sauce:
1 c. sour cream
1 c. mayonnaise
8 oz. blue cheese crumbled

Directions:
Directions:
Heat oven to 375º. Line a rimmed baking sheet or roasting pan with non stick foil. Set aside. Place wings in a large bowl or in resealable bags (ziplock)
Mix all dry ingredients together and toss the wings in make sure all wings are coated well.
place coated wings on the pan in one layer. Bake for 30 mins. Then flip wings over and cook for another 20 to 30 mins or until crispy. While wings are baking make the habanero sauce. Melt the butter in a large skillet over medium heat. Add the minced peppers and cook stirring, until peppers are soft (abt. 2-3 mins) Add all the remaining ingredients to pepper mixture and stir to combine. Simmer for 3 minutes, cool slightly then puree in blender. Return it to the pan,cover and keep warm.
For the blue cheese mixture combine all 3 ingredients and blend well. chill.
Serve wings with sauce on or on side along with the chilled blue cheese sauce. and enjoy!
