Ingredients: 1- 3lb Polly -o Ricotta drained through cheese cloth - let drain 6 hrs 2 cups sugar 1/2 cup sifted flour Graham Cracker crumbs 8 egg yolks Grated rind of 1 lemon 1 tsp Vanilla 8 egg whites Confectioners sugar 1/2 cup cream , whipped

Directions:Heat Oven to 425 º Beat Ricotta until smooth, gradually adding 1 1/2 cups sugar and egg yolks , beating after each addition . Beat in flour , lemon rind and vanilla . In seperate bowl beat egg whites with 1/2 cup sugar until stiff . Combine with whipped cream and fold into ricotta mixture. and turn into a 12" spring form pan which has been well buttered and sprinkled with graham cracker crumbs to cover bottom of pan . Bake for first ten minutes at 425º then lower the temperature to 350º and bake for one hour . Turn off heat and allow to cool in oven with door closed . Top should be golden brown. Sprinkle with confectioners sugar when you serve |
