Ingredients:  
Shortbread:
1 1/2 cups flour
1 tsp baking powder
1/2 cup sugar
1/2 cup butter
1 egg (slightly beaten)
1 tbsp milk
Filling:
3 tbsp soft butter
1 cup white sugar
2 egg yolks
1 tsp vanilla
1 1/2 cups coconut
2 egg whites
1 can crushed pineapple

Directions:
Directions:
Preheat oven to 350º
Mix flour, baking powder, sugar, butter, egg (slightly beaten)
Add milk
Mix together
Press into Pyrex dish
Bake for 10 minutes

Filling:
Mix butter and sugar
Add egg yolks
Stir in vanilla and coconut
Beat 2 egg whites (not too stiff)
Add to filling mixture

Spread crushed pineapples onto short bread
Then top with filling
Bake 20-25 minutes
