1 lb. purchased pizza dough
2 ears shucked corn (or 1 C frozen)
Cooking spray
2 T olive oil, divided
1/2 tsp. crushed red pepper
1 garlic clove, minced
1 C (4 oz.) shredded smoked mozzarella cheese
1 C very thinly sliced red onion
2 T chopped chives
1-1/2 tsp. grated lime rind

Directions:

Preheat oven to 500º.

In medium non-stick skillet, dry saute corn on medium heat until lightly toasted and browned. Remove from heat.

Combine 1 T oil and red pepper in a small bowl; microwave at HIGH 30 seconds. Stir in garlic; set aside.

Brush prepared pizza crust with oil mixture; sprinkle cheese evenly. Top with corn and onion. Sprinkle with 1/4 tsp. salt. Bake for 8 minutes or until golden. Sprinkle pizza with chives and lime rind. Cut into wedges.
