2 C water
1 C oats
3 T butter
1 pkg yeast
1/3 C warm water (100-115 degrees)
1/3 C brown sugar
1 T sugar
1 1/2 tsp salt
4 3/4- 5 1/4 C flour

Directions:
Directions:
In saucepan, bring 2 C water to boil. Add oats and butter. Cook and stir for 1 min. (or longer, if using rolled oats). Remove from heat; cool to lukewarm. In bowl, dissolve yeast in warm water. Add oat mixture, sugars, salt, and 4 C flour; beat until smooth. Add enough remaining flour to make smooth dough. Turn onto floured surface and knead until smooth and elastic, 6-8 min. Place in greased bowl, turning once to grease top. Cover and let rise in warm place until doubled, about 1 hr. Punch dough down; allow to rest 10 min. Shape into 18 balls. Place in 2 greased 9" round baking pans. Cover and let rise until doubled, about 45 min. Bake at 350º for 20-25 min. or until golden. Remove from pans to cool.
