¾ cups finely chopped carrots
¾ cups finely chopped onions
3/8 cup finely chopped celery
(approximately) 10 potatoes, cut into bite-size chunks

Directions:

Boil above ingredients in water until potatoes are tender

In a separate pot combine over medium heat, stirring constantly:
½ stick butter
½ cup flour
4 cups milk
2 cups chicken broth
½ teaspoon salt
Once the white sauce is creamy, add 1 ½ lbs. Velveeta cheese (cut into smaller pieces).
When the cheese has melted, add the vegetables AND the water they were boiled in. Add diced ham
Stir in onion salt (to taste)
