BROWNIE BATTER:
4 oz unsweetened chocolate
2/3 cup shorting
2 cups sugar
4 eggs
1 tsp.vanilla
1 1/4 cups flour
1 tsp. baking powder
1 tsp. salt
MINT MIDDLE LAYER:
2 cups powdered sugar
1 stick margarine
1/2 tsp to 1 tsp. peppermint
1 T. milk
green food coloring ( a few drops, not much)
CHOCOLATE TOP LAYER:
6 oz chocolate chips
1 stick margarine (1/2 cup)
Optional 1 cup chopped nuts.

BROWNIE BATTER:
Melt together chocolate and shorting.
Beat together with sugar.
Add 4 eggs and vanilla, beat to mix.
Stir in flour, baking powder & salt.
Do not over mix.
Bake 350 degrees for 30 minutes.
Cool brownies
MINT MIDDLE LAYER:
Beat powdered sugar & margarine together.
Then slowly beat in peppermint, milk and green color till smooth. DO NOT ADD TO MUCH GREEN COLOR, YOU WANT A VERY LIGHT GREEN COLOR.
Spread on brownies, refrigerate to set mint layer.
CHOCOLATE TOP LAYER:
Melt chocolate chips and margarine together.
Pour on top , spread and freeze for 10 mins.
Keep refrigerated!
SCORE CHOCOLATE WITH KNIFE SO CHOCOLATE WILL NOT CRACK WHEN CUTTING BROWNIES.

The brownies tend to be a little dry but that is what makes the mint layer and chocolate layer taste so good.
