1 Cucumber - peeled and sliced (seedless)
7 radishes, sliced
1 onion, halved and sliced (red or yellow)
2 cups grapes, mixed
1 small can pineapple chunks, drained
1 apple, green, cored and sliced
2 TBSP. lemon juice or the juice of one lemon
salt - 1 tsp or to taste
chopped fresh cilantro to taste (1/4 cup or more)

This is a very simple salad I learned from an Indian lady here in Bloomington, IL who often teaches cooking classes here in town. I serve this when I am looking for something a little different than the usual tossed salad. It is so refreshing.
If you are serving any Indian foods that are hot/spicy, this is great with it as a cooler-offer
