3 chopped plum tomatoes
1 chopped cucumber
a handful of chopped green onions
1/2 chopped red onion
1 small can of garbanzo beans
1 handful chopped parsley
1 handful chopped cilantro
chopped fresh mint to taste
Dressing
3/4 c olive oil
juice of 2 lemons
3 cloves minced garlic
1 tsp Dijon mustard
1 tsp ground coriander
1 tsp salt
pepper

Directions:
Directions:
Cook 2 cups of couscous according to the package directions. Fluff it with a fork and chill.
Toss all other ingredients with couscous. Do not dress till immediately before serving. Serve cold.
For a twist, try adding dried currants or raisins. You could also add chopped celery, radishes, or pineapple chunks.
