1 lb skinless haddock fillets
1 Tbsp. lemon juice
1/3 cup dry Italian bread crumbs
2 Tbsp. chopped parsley
1 tsp. paprika
2 tsp. butter
1 tsp. ea: grated lemon peel and orange peel

Directions:
In a shallow microwave dish, place fillets with thickest areas to outside edges of dish. Pour lemon juice over fish. Combine breadcrumbs, parsley and paprika; sprinkle over filets. Place pieces of butter on top of fish. Cover with microwaveable safe plastic wrap turning back one corner to vent. Microwave on high for 4 -to 5 minutes, rotating dish 1/4 turn after 2 minutes. Let stand 2-3 minutes and sprinkle grated orange and lemon peel over cooked fish. Can cook in 350º oven for approximately 20 minutes; a little longer if fish is on the thick side.
