Rum Truffle Recipe

5 oz. unsweetened chocolate, chopped
2 1/2 cups powdered sugar, sifted
1/2 cup unsalted butter
4 tsps. dark rum
unsweetened cocoa, sifted (for rolling truffles in)

Directions:
Directions:
Melt chocolate in a very heavy saucepan over very low heat.
Remove from heat and stir in sugar and butter; a little at a time.
Add rum and beat well.
Roll into walnut sized balls (or smaller if you like)
Place on waxed paper to cool completely.
Roll in cocoa powder.
Serve at room temperature.
