Scald: 1/2 c. milk
Add: 1 c. boiling water
1 1/2 T. butter (let it melt)
While this cools, dissolve:
2 T. yeast in
1/4 c. warm water
After the yeast rests 10 minutes, add it to the milk mixture with:
1 T. sugar

Dry ingredients:
4 c. sifted flour (can do part white and part wheat)
2 t. salt
2 t. sugar

Make a hole in the center of these ingredients. Pour in the liquid mixture. Mix thoroughly, but do not knead. The dough will be soft. Cover with a damp cloth and set in a warm place to rise until double (about 2 hours). Break down the dough. Place on a lightly floured board and form into long loaves. Place on a greased baking sheet (or in french bread pans). Cut slits on top with scissors.
Bake at 400º for 15 minutes. Lower temp to 350º and cook for 3 more minutes.

Can put a pan of water on the bottom rack of the oven while baking to help make a crispy crust.
