1 ¼ c. corn meal
8 tbsp. all purpose flour
½ tsp. salt
1 ½ tsp. baking powder
1 tsp. sugar
1 c. milk
1 egg, well beaten
1 tbsp. canola or vegetable oil

Directions:
Directions:
Sift dry ingredients together. Combine milk, egg and oil. Stir quickly to blend ingredients. Drop by ¼ cup measures onto hot griddle (400 degrees) or frying pan heated to about 4 on a gas stove. When cakes have risen and have bubbles on top, turn and cook on the other side.
You can add more milk for thinner batter – I use canola oil or vegetable oil to fry these. They puff up real nice and are really tasty. These are great with soup or stews.
