1½ cup butter
2 medium yellow onions (diced)
2 medium bell peppers (diced)
2 cloves garlic (diced)
¼ cup flour
½ bunch fresh parsley
1 pint half and half
1 oz. lemon juice
1 lb. Velveeta cheese (cubed)
3 lbs. shrimp (deveined and tails removed) or 3 lbs. crawfish tails
1 lb. crab meat
1 lb. fettuccine noodles (boiled)
Cayenne pepper
Salt to taste

Use a 12 qt. roaster. Turn stove on medium. Melt butter. Sauté onions, peppers, and garlic. Add ¼ cup flour and cook until it browns. Add parsley, half and half, and lemon juice until it starts to thicken. Add cheese until cheese melts. Prepare fettuccine noodles according to directions. Drain and set aside. Add shrimp or crawfish and crab meat to sauce and cook until shrimp turns pink and curls. Add in noodles and stir. Add cayenne pepper and salt to taste.
