1 c chicken broth
2 eggs
1/2 c minute rice
2 tbsp lemon juice

Directions:
Directions:
Combine 1 cup chicken broth and heat to boiling.
Whip 2 eggs with fork or whisk
1/2 C. minute rice (add to hot water. Let stand 5
min.)
Gradually add heated broth to egg mixture while
whipping.
When temperature of both is equal, add egg
mixture with 2 Tbsp. lemon juice.
(Don't let soup boil after egg mixture is added.
It will curdle.)
