1 c oil
2 1/2 c sugar
4 eggs
1 quart buttermilk
4 3/4 c all-purpose flour
2 tsp salt
5 tsp baking soda
1 box Raisin Bran Flakes (15 oz)
1 c pecans (chopped)

Directions:
Directions:
Sift flour, salt and soda together. set aside.
In a large bowl, mix oil and sugar. Then beat in eggs. Add buttermilk and flour alternately. By hand, stir in Bran Flakes and pecans. This batter will keep for 6 weeks in refrigerator in tupperware.
Fill muffin pans 2/3 full.Bake at 350º for about 12-15 mins.
Use smaller muffins. They make smaller muffins to serve to guest.
