Microwave Tapioca Pudding Recipe

1 quart milk
1/4 c. quick tapioca
1/2 c. sugar
3 egg
1/4 tsp. salt
1 1/2 tsp. vanilla

Directions:
Directions:
Combine milk, tapioca and sugar. Let set for 5 minutes. Microwave for 10 minutes on high or until steaming but not boiling. Stir and microwave another 7 minutes on high, uncovered, or until slightly thickened.

Beat 3 egg yolks, with 1/4 tsp. salt. Mix into the tapioca mixture, whisking briskly. Microwave 1 minute on high, uncovered. Beat 3 egg whites till stiff and add 1 1/2 tsp. vanilla. Microwave another minute, uncovered. Cool to room temperature or serve chilled.

If you don't want the fluffy kind, just beat the whiite of the eggs with the egg yolks and add as second step.
