1 C Finely Crushed Vanilla Wafers
2 Tbsp. Butter, melted
1/2 tsp. Ground Cinnamon
1 Envelope Unflavored Gelatin
1 8oz. Crushed Pineapple, reserve liquid to side
1 8oz. Cream Cheese
3/4 C Sugar
1 8oz. Frozen Whipped Topping, thawed

Mix wafer crumbs, butter and cinnamon; press firmly onto bottom of springform pan. Set aside. Sprinkle gelatin over reserved pineapple liquid in small saucepan. Let sit for 1 minute. Cook on low heat for 5 minutes until gelatin is completely dissolved, stirring occasionally. Beat cream cheese and sugar with electric mixer on medium until well blended. Gradually add gelatin mixture, mixing until blended and slightly thickened. Add pineapple and whipped topping to gelatin mixture; stir gently until well blended. Pour over crust. Refrigerate for several hours or until firm. Store cheesecake in refrigerator.
